 Post subject: Poor man's Shephard's pie.

1 lb hamburger ($3/lb at Fresh Market on Tuesdays only)

3.5 lb bag of Green Giant potatoes, peeled (10lb bag for around $5.65 at Sam's)

Hellman's Mayonaise

Heaping of I Can't Believe it's Not Butter margarine

Shredded cheddar cheese (5 lb bag of shredded Cheddar around $11 at Sam's; used only 2 cups at most)

1 can of Margaret Holme's Tomatoes, Okra and Corn (80¢ at Wal-Mart at the moment)

1 small pouch of Winn-Dixie Swiss Mushroom Gravy mix (50¢ per pouch)

Some herbs/seasoning (including Celery Seed, Mrs. Dash, and McCormick Garlic and Herb. Note: salt only added to the boiling potatoes step (and not really that much); plenty in the Magaret Holmes Tomatoes, Okra, and Corn so no need to add any more; trust me)

I have a mandolin slicer which I used to slice the potatoes. I boiled the slices thoroughly (salt in the pot too of course) and kept around 20 medallions aside and mashed the rest. For the mashed pototoes, I added a heaping of mayonaise and butter. To the cooked hamburer (drained) I added the herbs/spices and poured a can of the Margeret Holme's and then the gravy mix for thickener and poored all that into the cooking dish. I then spread the mashed potatoes on top of that and spread most of the cheddar cheese on top of the mashed potatoes. I then placed the cooked medallion potato slices on top of that and spinkled a bit more of the cheeze on to top. I baked for 15 minutes and then covered and cooked an additional 30 minutes to complete. I rested the dish for 10 minutes before scouping a dose for me. Then, after I ate the portion (jeeze it was freaking delicious), I decided to take a picture of this for posterity. lol

Guestimate that it costs around $10 total. Completely worth the effort. I wasn't that hungry since I used some of cooked hamburger and poured in on one slice of bread with a slice of American Cheese as a snack an hour prior, so only ate this portion to satisfy my remaining appetite. lol

Hardest part is the Potatoes prep, Pat. Maybe I might try Betty Crocker Au Gratin potatoes and instant potatoes next time. lolololol

I'm not a big fan of mayonnaise.
Is it essential that mayo be used,
or can it be omitted?

Lyle, that seems delicious and tasty. You only need a good dessert and if you like cheese, here you have my easy recipe: :)

Quesada Pasiega
4 eggs; 200 sugar;
100g. butter; 1kg. Fresh cheese;
Cinnamon ( a bit) Half of 1 lemon to get grated lemon peel
100g. Of flour

Heat the oven to 200 ° C. While , Beat the eggs with sugar and softened butter.
Mash fresh cheese with grated lemon peel, and cinnamon at zest, mixing all well. When this is mixed,
Add the flour gradually amassing with your hands until you have added all the flour. Then pour the mixture into a pie pan approx. 3cm tall.
Bake 30 minutes until the surface is golden brown and the dough done.
Let cool and put it into the refrigerator

They both sound Yummy although I would use Butter instead of Margarine,Lylejk, I've never found a Margarine I could eat. What sort of Cheese do I need, Issabella? Grated Cheddar or a soft cheese like Ricotta?

The I Can't Believe it's not Butter was on sale at Publix (BOGO). Besides, butter is way too expensive for me at the moment. I usually buy Move Over Butter at Wal-Mart but the BOGO made ICBinB cheaper. lol

Lyle, it's easy to do for a boy clever and skilful as you are. :)
Kimba, you know, our countries use different kind of brands and products, but fresh cheese is as very soft cheese so very easy to smash it. Yes, as ricotta is perfect. :)

Trust me Wallace. Adding some Hellman's Mayonnaise to your mashed potatoes will take them to the next level. Don't add too much though; you don't want it to taste like potato salad. Just add enough and, along with the butter (well, in my case margarine), it makes for delicious mashed potatoes. Now I used the mashed potatoes for my dish, but just the mashed potatoes by their lonesome benefits from the mayonnaise. :)

I don't really use mayo for much of anything.
I remember your recommendation of the,
Red Lobster Cheddar Biscuit Mix and they were great!
I'll trust you and add the mayo.
However,
store bought mayo is expensive,
given it's ingredients,
ie;

Egg
Dry mustard
Oil (safflower or corn)
White wine vinegar
Lemon juice
Salt & Pepper
Sugar


So I'll be making my own mayo from scratch.
I have all the ingredient at hand,
as well as an immersion blender to whip it up in seconds.

This way I wouldn't need to buy a jar of mayo,
which I'll only be using for this dish.
