Open the gtkrc file you just installed in Notepad ++.
Look for this code (it should be around line #117)

Code:
# Color of text generally.

     text[NORMAL]               = "#ffffff"


Change this to

Code:
# Color of text generally.

     text[NORMAL]               = "#000000"


That should work. :)
Make sure to open a few dialogs and check the interface for any other mistakes....thanks!

I wasn't able to find that text in the large icon gtkrc file, but I have had some fun fooling around in the gtkrc file located in the Metallic_Blue theme folder, trying to see what controls each color.

When people mention a line number in the script, how are they seeing that? I don't see anything to turn on in wordpad or notepad to be able to see that indicator.

How does the gtkrc file located directly under themes interact with the ones in the individual theme folders?

And how would I go about changing the background of the menu file bar? (the bar that the words file, filters, help are on.)

If you mean the gtkrc file in the gimp-2.8 folder (where the themes folder is located) that is the MAIN rc file for the interface. Gimp selects that one before any others.
Notepad ++ is a different program than Notepad and has many more options.It contains the line numbers.
Notepad ++ is available for free here for windows.
