You have to toggle snap with the first button in the snap toolbar "Enable Snapping" (or %) in order for the other snap modes to have an effect

Under Document Properties there is a grid tab that will indicate the various grids in the document and the snap to grid behavior.

Fill and stroke in Calligraphy mode are a bit different, as the "fill" is really what you would consider the stroke with an actual calligraphy pen, and the "stroke" is an outline around that.

Both freehand and bezier can have stroke and fills - it just depends what they are set as. And you can stop drawing a bezier curve by double-clicking the endpint node, right- (or in your case left-) clicking, or hitting enter.
