I think an interesting and useful way to create curves would be if there was a function that allowed the user to create near curves using straight shift-click lines then to press Enter and have the lines smoothed into a real curve. This would make design work so much easier.

There is of course a plugin like your description, but to smooth paths. Do not know how you might do that with the paint tool Ask the devs for an enhancement.

I find that paths can get a bit tricky with more complex shapes. How would I contact the devs?

I have been searching for this plugin online but I can't seem to find it. I thought it was an ofnuts plugin but I have most of his and it's not among them. Do you know of a link to this?

From the defunct gimp-registry site. Originally for Gimp 2.8 but a quick try in Win10 64 bit /Gimp 2.10.14 and works ok.
Compiled plugin smooth-path.exe goes in
(Windows) C:\Users\"yourname"\AppData\Roaming\GIMP\2.10\plug-ins
(Linux) ~/.config/GIMP/2.10/plug-ins
