Yes, it's doable. Whatever it is that you want to do, is the question.

Honestly, I'd use some of the handwritten fonts from dafont. Unless you are creating something that requires own font. Most of the free fonts are free for personal use, but not for commercial use.
You could just use a brush, with dynamics set to a preset called speed-size-opacity.
Pay attention to the speed you draw. If you draw fast the edges will be rougher. And you can try different brush.



Median blur to smooth the edges.



If you'll end up doing all letters and numbers, you can easily create a custom font using the custom font script.
It's not like FontForge or some other real font creation tool to make .otf or .tff fonts but quick and fun way to create pixel fonts.
