Hi, I am VERY new to GIMP. Immediately following installation, I accidentally denied permission to access files on my desktop. How do I fix this?

If you are using Catalina, it is a known bug.

No not Catalina, using Big Sur on MacBook Air with M1 chip.

Anyhow, the issue is SOLVED. Had to go to System Preferencs>Security & Privacy>Files & Folders and check off permission for GIMP to access my Desktop Folder.
