Am I right in thinking there is a way to convert a palette to a gradient?

Yes there is. Open the dockable palettes windows, right-click the palette you want to convert.

Doesn't exist in my menu for some reason. I have it in 2.8 and I was able to use that for now but not in 2.10 portable (Portable Apps)

It is in my Samj portable. Try it if you want. I am using 2.10.12 portable. It is a .py file.
