For question one, best looks at videos, search for "Gimp dock" (with a "k") on youtube.

For question two, it is also straightforward in Gimp, make sure the layer has an alpha channel (Layer>Transparency>Add alpha channel) so that the eraser makes a hole in it instead of filling with the background color.

Easiest way to add an Alpha Channel is to right-click on the layer and select "Add alpha channel" before you start erasing.

Get used to right-clicking everywhere, most of Gimps options can be accessed that way. Gimp versions 2.10x allow you to edit preferences to make all imported images have alpha channel by default. I don't think Gimp 2.8x allows that though.

Nothing is trivial. Einstein once remarked that the only stupid question is the one that isn't asked. ;)
