Hi there. I'm trying to increase my abilities with Gimp text but have run into a problem. After I opened a new page and typed in my text, it appeared upside down and or back to front. I figured out how to rotate it to read correctly but I'm stuck at this pop up - which won't let me edit my text any further. Please advise how to fix this!

You have obviously click on 'layer to image size' (text layer)
If you click on edit you will be given the option to edit your text.
Create new layer will give you another layer of text.
Cancel out and you can continue edittting - adding drop shados etc

When you rotated the text you converted the text layer to a bitmap layer (look in the layer dialogue, text has a big Letter as the icon). At this stage Gimp still knows the original text settings and you can go back to pre-rotate.

That is not the problem. This is the problem " it appeared upside down and or back to front" You need to determine why, it is not normal text tool behavior. There are settings for right-to-left and from the on-canvas tool vertical text but ...upside down....?
