I made this Image (http://sadpanda.us/images/835736-O3Z9EUX.gif)using the animated path script but I was wondering if it is possible to animate it so the inside of the text is filled in as well piece by piece any help on accomplishing this is greatly appreciated.

You would have to un-animate it and select your text and fill with color, then animate the text again and add your background at the bottom of the stack and combine background.

Use the path to create layers with filled "J", "JA", "JAM","JAMI", "JAMIE" and use my shiny new script to insert & merge down multiple copies of each in your animation, for instance, "J" on all layers where the animation strokes the "A", "JA" when it strokes the "M", etc...

Script is here: http://registry.gimp.org/node/25987 (use the single-layer mode I added tonight)
