Using Photocomix 2.8.2 Gimp-NoExtra win32 I'm seeing the same thing:
I have 3 fonts identified as Symbol, Webdings and Wingdings, Windings 2 and Wingings 3.

If I change font from something else to one of the above it changes to some standard alpha font (not sure which one) instead of showing the results in the symbol font.

Wordpad.exe (as a simple example) correctly shows whichever of the symbol/webdings/windings fonts I've selected.

Retrying with GIMP 2.6 (2.6.8 actually) the special symbol fonts work as expected.

Looks like something that s/b posted to bugzilla.

That's cool. A must have bookmark on that converter. I left the font as otf and it works fine.

Wingdings and webdings on't work for me with McGimp 2.8. Neither do any of the foreign fonts.

I just see regular abc characters for wingdings and webdings. Looks like a bug needs to be submitted to Bugzilla; bet you someone already has done so. If not, I will. :)

It appears that it's not just GIMP. I couldn't view the webdings font in the Linux font viewer until I converted it to OTF. I then converted it from OTF to TTF and I could view it using the Linux font viewer.

I tried *bats in my Gimp 2.8.
The result is the following:
Regularly installed (adobe) dingbats just gave latin characters.
Regularly installed webdings (part of "corefonts") worked fine.
With regularly installed I mean from Gentoo repository.
I then searched dafont for dingbats and installed "Lomonesia-dingbats.
Works fine.
I did some more research and noticed that the two 'bats that work are ttf files.
Adobe dingbats comes as a .gz file.
When I gunzip it I noticed that it has regular ~ascii code + 3 or 4 byte (UTF8?) code that contains the pictures.
I don't have a copy of Gimp-2.6 anymore so couldn't try that.

So far I've never used dingbats or similar but I was just curious.

I found I have a copy of Gimp-2.6.after all.
Exactly the same behaviour as 2.8 as far as dingbats/webdings is concerned.
