GIMP Version: 2.8.10
Operating System: Mac OS
GIMP Experience: Beginner Level

I'm outputting the same size files (200k-500k each)
Even now when I press 'save' it's taking 2-3 minutes to save.

Any ideas? Does this sound like I have a bug?

@otherwhirl
It might also be an issue with your harddrive. A modern drive shouldn't need to be de-fragged all that often, but check its performance for other small files just to be sure. Worst case scenario is that the drive is failing.

@Wallace:
You have 139 GB or RAM?? I presume you mean your harddrive?

I have 32GB or RAM on my artwork machine. The supercomputer at work has 16GB per node (although many, many nodes). :)

Yes, Wallace, your hard drive is just the space, I think they were talking about how much ram you have, 2,4, 8, 32 etc.
Some of the larger programs like Gimp or large APPs take up a lot of RAM when running these programs, the more RAM, the better they work.
