How can I make a particular font I use often the default font that comes up when I create a new layer with text, instead of the default 'Sans'?

Thanks

Select the font you want. Then, Edit/Preferences/Tool Options and click "Save Tool Options Now"

This saves the current state of your tool options.

follow these instructions but Don't forget to uncheck 'save tool options on exit, now the confusing part is if you select Sans to do a text layer,
then if you do another text layer Sans will still be active it's only when you restart Gimp does your default become the active font
