The captcha results(*) are used by Google to train AI. The street signs have been around for a a while, so the more obvious cases are likely solved and they are now on more difficult stuff, even for humans.
(*) some of them. They know the answers to the others but since you don't know which are the true questions and which are the checks you have to to your best for all of them.
