After playing around with the different gradient/blend shapes I found that dimpled does a good job providing you use a multi coloured gradient.
Add your text, alpha to select, then after setting your blend tool options to shape dimpled and required gradient, run your gradient from the centre across to the edge (all will be filled in).

Nice discovery Sallyanne. I like the smooth result, not to mention you can edit the gradient live in 2.10.
