Looks like it's the only thing I cannot check to remove from the Properties

Exporting as a jpeg?

Open Advanced Options
un-tick Save EXIF data

Look at the image. Not a Windows Properties Edit option.

It is an option in Gimp -> Export -> Advanced Options
For a jpeg export untick Save Exif Data. If it is grayed out there is no exif data.

In a futile attempt to be helpful.

There are small, free, utilities that will strip the metadata (EXIF etc) from a jpeg

This one for example.

No installation, unzip and run.
