Question:
Is there either a plugin or a way to use a gradient to get this horizontal rainbow effect across text?

I made a gradient that can do this. When you stroke this gradient, it looks like the image below.

You can grab this gradient from the attachment.

Note: The other gradient I made is much better. See attachment (RainBow-Sample II.ggr [1.5 KiB]) in post #4

If I wanted to change the color scheme to match exactly like the one in my example how would I do that?

But how would I go about creating this? I need to learn how to do this from scratch (not really, but I figure if I actually learn how to create everything I ask questions for , sooner or later i'll move out of the 'noob zone' :-)

You would need to learn how to create and edit gradients. There's a couple of ways to do this.
There are tutorials out there on the subject, and also here on GC.

While we are on the subject of gradients, I find it very useful to sample gradients using images of actual objects and thanks to RobA, he has made it easy with the Sample Gradients Along Path Script.

You can also sample gradients using G'MIC, but due to the limitations in the preview, I find the script a little easier to use, especially when dealing with small areas..
