Here's a nice little toy:

IMHO easier to use than Knotter and it's a browser app (HTML5 <canvas>) so platform-independent.
Only had a little play so far:

Still think it should be possible to do this in Gimp.

BTW
If you set the Tools to "Open border" and then use "Randomize" the output pattern is in most cases a seamless pattern
eg.

Yeah, when I said "do this in Gimp" I meant in a semi-automated way (rather than using labour-intensive methods like the path-tools). Would have to be a plug-in, GUI-driven like Knotter or the utility I linked to above.
The latter is good for quick doodles and generating interesting (random) seamless patterns which you can then colour-in and manipulate, eg. one with gold and chrome BRL:

..but it does have its obvious limitations:
- does not do "diagonal cuts" in the lattice;
- uses same width and colour throughout;
- only does rounded shapes, not "pointed corners".

An interesting thread so I downloaded Knotter as discussed above and am trying to learn how to produce those clever Celtic knots ... but its also good for other things like Knotter+GIMP+GMIC+BRL ...

Just glad this topic came up; hadn't installed knotter since ol' Betsy died on me. I like the knot fill feature that knotter has. You can fill an arbitrary selection with knots that is. Did a trace for this one that's knot me. lol

Knotter was one of the first programs i re-installed. On the same subject have you tried Rob and MareroQ's Knotter Switch plug-in? It opens Knotter from GIMP.

Wallace the python file opens Knotter (the program) And you can then create a knot , select all the nodes, and edit>copy - Edit>paste into GIMP as a path. Then you can stroke the path with a brush or do what you want with it. Many possibilities. You have to have Knotter for the python filter to work. Also you will need to edit the python file to point to your portable knotter directory executable file.

I've not tried the python interface or the built in GIMP interface within Knotter itself Rod. Not the way I like using either program. May be useful for some but again, I follow my own piper if you will. lol
