This generally occurs when the Enter key is presses,
which will commit any open selection made by the Free Select tool.
Thus making it a completed selection at whatever point the Enter key was pressed.

Have you tried going into Preferences and resetting saved Tool Options back to default values?

Also,
when using the Free Select Tool,
double-clicking the left mouse button.
Will close the path from the last placed anchor.
Could you perhaps be accidentally double-clicking the left mouse button?

Other Things to Check:

1) If your mouse is old,
the left click button may be going bad.
Try another mouse to see it this corrects the issue.

2) if its a wireless mouse.
Check the batteries,
or replace them.

3) Check mouse setting.
To determines the two mouse click interpretation.
Narrowing,
or widening that interval between clicks my help.

I agree with Wallace about your mouse. I used to do a lot of Gimp cut outs and found I needed a 'high definition mouse'. Try using a Microsoft mouse or a 'gaming mouse'

Yes.
The better a mouse is,
the more accurate it will be,
in nearly every task the mouse is required to preform.

Personally,
I use the Logitech G502 Proteus Spectrum.

wallace & tas_mania thanks for the fast respons.
I tested directly with another mouse, and the cutting out is perfect now.
however, the mouse was not that old but as you see it can always happen.
thanks again, and now back to the cutting work
