Every once in a while I'll open a photo in GIMP and it will offer me this 'Keep or Convert' window. (see attachment) What does it mean? Does the choice affect how I can utilize GIMP's features? Thanks.

If you're not using Color Management with GIMP I would convert. Read the whole topic for more info.

Thanks guys. But is there any difference in terms of GIMP's functionality choosing either Keep or Convert? It said it's recommended that work be done in RGB (hence Convert) so is that what you do?

There is an answer, that sounds very hard (the answer is not from me, I heard it once):
If you do not know the difference between sRGB and AdobeRGB, than you just need sRGB.
Or, not such hard:
AdbeRGB can hold more colors than sRGB, but you need devices, that can display those colors. Most devices can not, especially Web-Browsers.
You really need to know, what a color space and color profile is. If not, than you will be maybe disappointed, if you do a very good work on your photo, put it to flickr or whatever in web and the your photo looks pale and not color correct.
What I do? I use sRGB and do not take photos in AdobeRGB, although my photo equipment is able to do.
