I wonder what if you do two fountains one shoot up and another one at 50% opacity over top shooting down, what it would create.

Yes! A basic tutorial would be nice. There may be some out there but I have not found them.
Since you have other tutorials, I would like to see them also and see if I can do them. Are they on DeviantArt?
